I have found what may be the most awesome caramel corn recipe out there. I made a batch of this delicious stuff yesterday and my family has eaten it all already!! I found the recipe at www.recipegoldmine.com/ccg/garrett-crispy-caramel-corn.html.
I hope you enjoy this recipe as much as we have.
Ingredients:
- 1 heaping tablespoon of solid coconut or peanut oil (coconut oil delivers the BEST taste).
- 1 cup unpopped white popcorn (I used Boy Scout popcorn)
- 2 teaspoons salt (I use Morton Popcorn salt, which is a lot finer than regular salt)
- 2 cups of light brown sugar
- 1 cup (2 sticks) of salted butter
- 1 cup light corn syrup
- 1/2 teaspoon baking soda
Directions:
- Preheat oven to 250 degrees.
- Heat coconut oil in a large pot over high heat (I use a Whirley-Pop). Add kernels and pop. Shake the pan as the kernels pop. Keep over high heat until popping slows to just a few pops per second. This process takes 3-5 minutes.
- Pour the popped corn into a large brown paper bag. Add in the 2 teaspoons of salt and shake.
- At this point you can sort out the unpopped kernels and discard. Measure 13 cups of fully popped popcorn, spread onto a large roasting pan and set aside.
- Blend together brown sugar, butter, corn syrup and baking soda into a medium to large heavy saucepan.
- Heat to boiling over medium-high heat. Cook, without stirring, until the gooey mixture reaches 235 degrees Fahrenheit on a candy thermometer. This process takes about 8 minutes. Remove from heat.
- Carefully pour the caramel mixture over the popcorn. Stir mixture with a heat resistant spatula or buttered wooden spoon. Work quickly to coat the kernels.
- Bake popcorn for 60 minutes, stirring every 10 minutes, making sure the kernels are evenly coated.
- Remove from pan and cool on a wire rack.
- Break apart clumps of corn with your hands.
- Store in air tight bags or containers.
- Enjoy!! Warning: It is HIGHLY addictive.

For this year’s Christmas gathering I signed up to bring a couple of Jell-O salads. One of the of the salads is going to be a pretzel salad, which that recipe will be posted a little later, and the salad that I am going to feature now is the cherry Jell-O salad. It’s super easy to make and tastes great.
Ingredients:
- 2 small boxes of cherry Jell-O
- 3 cups of boiling water
- 20-oz can of cherry pie filling
- small jar of marshmallow creme
Directions:
- Bring 3 cups of water to a boil.
- Combine water and Jell-O powder together in a large bowl.
- Add marshmallow creme and stir until blended. The marshmallow creme will melt and it will look like this:
- Add can of cherry pie filling and stir a little bit.
- Cover and refrigerate overnight. Enjoy!!
